- For lemon rice
- 250 gms rice, cooked
- 1 lemon
- As Per Taste Salt
- As Required Coriander leaves, chopped

- In a small mixer jar, take all the ingredients to prepare the masala. Grind it to a paste without adding water.
- For seasoning in a large Kadai, heat oil. Add in mustard and let it splutter. Add in urad dal, chana dal, and fry until golden and crispy. Add in sliced onion, curry leaves, and sauté. Add in sliced capsicum and sauté until well cooked.
- Add in turmeric powder and sauté. Add in the prepared masala paste and sauté until the raw smell goes away. Let it cool down for some time.
- In another pan heat oil and fry peanuts until crispy, let it cool down. To prepare masala seasoning add in cooked and cooled rice along with lemon juice, salt and mix everything well.
- Finally add in fried peanuts, chopped coriander leaves, and mix.
- Masala Lemon Rice is ready to be served.
